So many suggestions:
Hiking on the Mönchsberg
One for the tourists (even locals can be tourists!) - a wonderful shaded walk up to the Mönchsberg from the Dom (cathedral), with tremendous views from Richterhöhe across to the Leopoldskron lake (Sound of Music). Hard work with a pushchair on the ups and there are some steps. It’s 2.5km with 80m height climb. Suitable for most people. https://www.komoot.com/tour/189591262?ref=itd Of course, once you’ve got to Richterhöhe you can extend the walk northwards a lot - it’s easy to spend several hours up walking on the Mönchsberg - a wonderful oasis of calm above the city. Find the Buddhist statue, the modern art museum, the place where they once tried to cut through the mountain...

Climbing at an outdoor climbing wall
There are several free open air walls (e.g. Müllner Schanze, Volksgarten, Uni-Park), or visit Kletterhalle Salzburg or Boulderbar Salzburg.
Stand-up paddling
On the Fuschlsee, bus 150, to Fuschlseebad. Go explore the lake for the whole day.
Walk round the Fuschlsee
Walk around the lake (11km). Bus 150 to Fuschl Brunnerwirt.
Bike tour
This easy, flat, 20km tour from the Unipark to the foot of the Untersberg, is a gem: https://www.komoot.com/tour/193279387

Gaisberg - hiking, paragliding, eating and drinking at the Zistelalm
Bus 151 from Mirabellplatz will take you to the top of the Gaisberg.

Go Paragliding or just watch the paragliders from the top.
Cocktails
Get a cocktail with an amazing view at the Panorama Bar on the 16th floor of the Cool Mama hotel.
Also the Steinterrasse in the city centre.
Untersberg: By cable car or hiking
You can always go up the Untersberg, experience the cable car, and explore the mountaintop paths. Views. Fresh air.
Or hike up (not for the inexperienced)!
Burgers
Visit the Thunder's Truck food truck for a Saturday lunchtime burger treat (10:30 - 16:00: veggie, beef, pulled pork...) at Fürstenalle 2, Nonntal
Museums
Too many to name but a special mention to the Salzburger Kunstverein, the big red building on the river by the Justizgebäude. Free exhibitions by international artists. The main language is English. There are also frequent free openings in the evenings and the fabulous Sunset Kino in the summer.
Salzburger Freilichtmuseum
This wonderful open-air "museum" of over 100 historical buildings is Salzburg's largest museum. It is set over a huge area and has its own train, Gasthaus, kids' playground and so much more. Plan to spend a sunny day here. Postbus 180. Closed in winter.
Welt der Gifte
Salzbug's smallest museum: The World of Poison. Meet some of the world's most poisonous animals. The owner, Nils Kley, is a registered vet. He will personally show you round the animals and give you the opportunity to hold or touch one or two. A great way to deal with your fear of snakes, or to teach kids not to be afraid.
Haus der Natur
A very popular rainy day option, this museum of nature and technology is a wonderful way to spend a day.
Fleamarkets

A night at the theatre, opera...
For a very small city, Salzburg has an amazing cultural scene. Check out what's on in the Salzburger Landestheater or the Marionetten Theater.

...Or just do what the locals do, dive into a coffee shop, drink a coffee very slowly, read the Salzburger Nachrichten and half your day is gone already!
